OK, first, frittata!
Oh, what an elegant-sounding word! Do you know what it means in Italian? It was originally a general term for cooking eggs in a skillet, like any types of eggs. From fried eggs to omelettes, to Spanish patatas, all of them could be frittatas.
Outside of Italy, nowadays, when people say frittata, most of the time they are referring to one thing – an open-face omelette. THAT is what we are making today!
Like a conventional omelette, we are going to enrich it with lots of vegetables, meats and cheese (of course!). Unlike a conventional omelette, we are not going to fold the ingredients into the eggs. Instead, the vigorously beaten egg mixture will be cooked slowly until the underside is set but the top is still runny, then sprinkle with cheese and bake until the cheese is melt.
In order to do all that smoothly, you’ll need a very important cookware – a skillet or a sauté pan that can go into the oven directly from the stove. Have a cast iron skillet? Great. Use it.
The process of making this frittata recipe is fairly straight forward. You sauté the vegetables in olive oil or butter until they are tender, followed by cooked meat and hash browns. You don’t even have to season the ingredients because you’ll beat the eggs with salt, pepper and a pinch of dried tarragon. Once you pour the egg mixture into the veggies and meat, the flavor will run through evenly, especially if you beat the eggs vigorously, to incorporate more air. It will also allow a deeper filling and a fluffier result.
At this point, you are still working in front of the stove. But there’s not much left to do other than waiting for the egg mixture to set. If you haven’t preheated your oven yet, now is the time. Then you sprinkle cheese on top of all ingredients in the skillet. (Feel free to do it liberally.) Pop the whole thing into the oven to allow the cheese to melt.
That’s it. You’ve made a frittata or a crustless quiche. Whatever you call it, slice it up and serve!
Or, you could just serve it in the same cookware from the oven to the table without cutting or using any plates. I love my cast iron skillet to death, but I don’t eat from it. Try this easy frittata (open-face omelette) for a special breakfast or a weekend brunch. It's enriched with vegetables, turkey ham and cheddar cheese.

- 2 tablespoons cup onion, diced
- 2 tablespoons cup red bell pepper, diced
- 1/2 cup broccoli, cut into small florets
- 1/4 cup mushroom, sliced
- 1/2 cup turkey ham, diced
- 1/2 cup frozen diced hash brown potatoes, thawed
- 3 eggs, beaten
- 1/2 teaspoon sea salt
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon dried tarragon
- 1 tablespoon butter or olive oil
- 1/4 cup shredded cheddar cheese
- Sriracha or ketchup (optional)
- Preheat oven to 350°F.
- Chop onion, red bell pepper, broccoli, mushroom and set them aside all together. Dice turkey ham and set aside with hash brown potatoes.
- Whisk eggs with salt, pepper and tarragon and set aside.
- In a 6-inch soapstone sauté pan or cast iron skillet, melt butter over medium heat. Add onion, bell pepper, broccoli and mushroom; cook for 4-5 minutes or until the vegetables are tender.
- Add turkey ham and potatoes; cook for another 2 minutes, stirring often.
- Pour egg mixture into the pan; switch to low heat and let it cook for 8-10 minutes or until the egg is about to set.
- Remove from heat; sprinkle with cheddar cheese and bake for 5-7 minutes, uncovered.
- Drizzle with Sriracha and serve immediately.
This recipe can be made in a 9-inch cast iron skillet for 4 servings. Simply double the ingredients and follow the instructions in the recipe.
